SERVES 4-6 people
2 tbsp olive oil
5-6 medium to large size russet potatoes, skins on, sliced thin
1 large onion, sliced thin
1 1/2 pints Heavy whipping cream
3 tbsp flour
4 oz. cheddar or Mexican cheese, shredded or grated
1/2 tsp Salt
1/4 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
Wisk the heavy cream with flour in a medium size bowl.
In a large heated skillet, add the sliced potatoes, turn heat to medium and fry the potatoes for 1-2 minutes.
Add the sliced onions on top.
Sprinkle the potatoes and onions with salt, pepper, garlic powder, onion powder.
Pour the cream/flour mixture over potatoes/onions. (You can taste and add more seasonings).
Cook in pan approximately 20 minutes or until potatoes are soft (test with a fork)
Sprinkle the cheese over top and mix it up. After cheese is fully melted, remove from heat.
