BROILED HADDOCK WITH FRESH MANGO SALSA

Haddock

2 Mangoes

1/2 small red onion, diced

cilantro

1 jalapeno

1/2 red bell pepper

1 lime

salt/pepper/onion powder

DIRECTIONS:

Cut and dice Mangoes.  If you don’t know how to do it, there are videos out there.

Add the diced mangoes to a bowl, along with the diced red onion, diced jalapeno, red pepper and cilantro. (If you don’t like cilantro, omit it or add some fresh parsley in its place.)

Cut lime in half and squeeze the juice into the mango salsa.  Sprinkle with salt.

NOTE:  Optional:  Add 1 or 2 tsp honey.

Set in refrigerator to “marry the flavors”.

Meanwhile, while the mango salsa is in the frig, preheat broiler to high.  Place your fish on a large baking pan. Sprinkle the fish with salt, pepper, onion powder.

Broil 6-8 minutes until fish flakes with a fork and is no longer opaque.

Place fish on a dish, adding heaping spoonfuls of the salsa.

Pictured with the fish is noodle and peas in a Parmesan cream sauce as a side.

This salsa will work well with shrimp tacos, fish tacos and the like.
