HOT ROAST BEEF SANDWICHES

Working all day and then asking yourself, “What can I make for dinner?” can be challenging.  Unless you are like me and plan your meals for the week and grocery shop accordingly.  Not too many people do that.  Many of us just come home, quickly thaw something in the microwave and throw it in the oven.  Cooking certain things in a crock pot, such as beef, is a great way to come home to an already prepared dinner, well almost.  You may want to make some sides.   But 90% of the meal is ready when you open that door and smell the aroma floating about dying to dig your fork into that!

INGREDIENTS:

2 1/2 lbs. boneless chuck roast

3 packets of beef gravy

1 1/2 cups water

salt & pepper

garlic powder

onion powder

2 tbsp corn starch

2 tbsp cold water

bread of your choice

Optional:  Oven baked fries

DIRECTIONS:

Place roast in crock pot.

Salt and pepper meat.  Add generous amounts of garlic and onion powders to meat.

Mix 3 packets of the beef gravy with 1 1/2 cups water.

Pour gravy over beef.

Cover and cook in High 6-7 hours.

15 minutes before serving, mix 2 tbsp corn starch with 2 tbsp cold water.  Pour in crock, cover and let thicken 10 minutes.

Serve pieces of roast on your favorite bread, top with gravy.

OPTIONAL:  30 minutes before roast is done, turn oven to 425° and bake some crinkle cut fries or whatever kind you like. Cover with gravy!  Or you can make your fries, being sure to double fry them for crispier fries.
