BROILED PARMESAN CRUSTED HALIBUT

My husband, Bruno has been going on and on for about 6 months that he wants to try Halibut.  However, for 2 thick steak-like pieces of the Alaskan Wild Caught Halibut in Walmart, it is $20! Since there are 3 of us, I would have to buy at least 2 packs, if not 3.  When we were in Ocean City Maryland recently, I said why don’t you order the Halibut as several of the restaurants had it, but he just shrugged his shoulders (as usual).  So both of us having won money at Ocean Downs in Ocean Pines, Maryland, when we got back, I took the plunge!.  I bought 3 packs!  Later, after eating it, we found 1 piece each would have been plenty but if you know me, I tend to worry that there will not be enough for everyone to eat! Or Bruno will say, I’m full if I have more than enough.  But if I have enough for one serving each, he will say, I’m still hungry, I could eat more! Thus my dilemma in thinking I won’t have enough and always have leftovers! But honestly folks, one piece of this thick fish is plenty.  Hope you enjoy!

INGREDIENTS:

1/2 cup grated Parmesan cheese

1/4 cup butter, softened

3 tablespoons mayonnaise

1 lime, cut in half & squeezed

1 dash hot pepper sauce

2 pounds skinless halibut fillets or haddock or cod (But try to use Alaskan Wild Caught!

Oil olive

sat & Pepper

DIRECTIONS:

Preheat the oven broiler.

In a bowl, mix the Parmesan cheese, butter, mayonnaise, squeezed lime juice, sprinkle of black pepper and hot pepper sauce. 20180710_175959 (002)

Add 2 tbsp olive oil to pan.

Add the fish and season with salt & pepper.

Broil halibut fillets 8 minutes on High in the prepared oven, or until easily flaked with a fork. Spread with the Parmesan cheese mixture, and continue broiling 2 minutes, or until topping is bubbly and lightly browned.
