LOBSTER ROLLS AND BROILED SHRIMP

INGREDIENTS:

Lobster Rolls:

For 3 rolls:

1 ½ lbs. cooked lobster, rough chop

½ cup finely diced celery

Juice of ½ lemon

½ tsp black or white pepper

2 Tbsp. Mayonnaise

Pepperidge Farm New England split on top buns

Toss all ingredients together.

Toast the sides of the bun under the broiler about 1 minute but watch it because it could burn.  Add 1/3 lobster roll recipe to each bun.

Broiled Shrimp:

1 lb. peeled & deveined colossal or jumbo shrimp

¼ cup olive oil

1 tsp red pepper flakes

½ tsp. salt

½ tsp. pepper

Juice of ½ lemon

shrimp in pan (2)

Coat the shrimp with the above ingredients and broil under oven broiler until pink, about 3-4 minutes per side.
