LISA’S STUFFING

INGREDIENTS:

6 oz. box chicken stuffing mix

2 medium potatoes, cut in half and boiled until soft

1 egg, lightly beaten

2 celery stalks, chopped

1/2 onion, diced

3 tbsp butter

2 tbsp pecorino romano (see my blog on grating your own!)

10.5 oz can cream of celery soup

1 can chicken broth

DIRECTIONS:

Prepare stuffing by adding can of chicken broth to a medium sauce pot.  Add 1 tbsp butter.  Bring to boil, remove from heat.  Add stuffing mix and cover with lid.  Set aside.

Boil your potatoes until soft.  Once soft, mash with a hand masher.

Saute your onion and celery in 2 tbsp butter, approximately 6 minutes.  Add garlic and saute 1 minute.  Add the onion celery mix to the stuffing.  Add the egg, cream of celery coup, mashed potatoes and pecorino romano.  Mix up well.  Spread in an 8 X 8 pan, sprinkle with sweet paprika.  Bake 375° for 45 minutes or longer.
