CHICKEN SALAD

For this recipe, I had approximately 2 cups cubed chicken leftover from another recipe.  So I decided to make myself some chicken salad for my work week lunch for a couple days.  Feel free to add dried cranberries, sliced red grapes, whatever you desire!

INGREDIENTS:

2 cups cubed chicken processed in food processor to your liking

3 tbsp mayo

1 celery stalk, split down middle and chopped small

Black pepper, coarse or ground

Bread/bun of your choice.  In my picture, I used a multi-grain sandwich thin

Lettuce, tomato, american cheese

DIRECTIONS:

Add all ingredients to a bowl and mix up.

Serve on bread of your choice with your choice toppings.  Also very good if the bread is toasted.
